This summer has been, by most accounts relatively average in CT, but this week the weather is just plain HOT. To BEAT the HEAT try this refreshing soup:
Watermelon Gazpacho
2 cups Watermelon, peeled & chopped
¼ cup Shallots, diced
¼ cup Green pepper, diced
1 cup Cucumber, peeled, seeded & chopped
1 ½ cups Tomatoes, peeled & chopped
½ each Jalapeno pepper, seeded and chopped
1 fresh lime for garnish
Method:
Blend all ingredients together in a mixing bowl using a wand food processor. Chill for 2 hours. Serve chilled in fancy glass. Garnish with Lime.
Simple to make and no heat, other than from the sun, required.
