CHEFS MOVE TO SCHOOLS BRINGS PIZZA TRUCK TO NHPS ELEMENTARY AND MIDDLE SCHOOL SUMMER PROGRAM
A brick pizza oven on wheels today provided a break, a treat and a nutritional lesson to elementary and middle school students attending a summer program.
Skinny Pines Catering, LLC donated its brick oven pizza truck as the part the Chefs Move to Schools program administered by the U.S. Department of Agriculture. The district supplied the ingredients and High School in the Community's cook, Cheryl Barbara to assist Chef Jeff Borofsky of Skinny Pines, said Chef Timothy Cipriano, New Haven schools’ executive director of food services
The Chefs Move to Schools program matches chefs with schools to teach students about nutrition and healthy eating choices, Cipriano said.
“Chefs Move to Schools has been a success since it kicked off in June 2010 on the South Lawn of the White House,” Cipriano said. “Local chefs have embraced the program, and the kids love meeting with and learning from them. We have adapted the program to New Haven, adding a farm-to-school component and school gardens, and promoting their produce in our salad bars. The addition of the mobile pizza oven is very exciting.”
Students today learned how the 900-degree wood-burning pizza oven works and got to sample the results. The event teaches kids about local food and smart eating decisions, Cipriano said.
The students, who are 5 to 13 years old, are attending the Ikenna Summer Program at Wilbur Cross High School, facilitated by Principal Lola Nathan.

New Haven Public Schools are feeding the future with salad bars from Whole Foods Market®
New Haven Public Schools are feeding the future with salad bars from Whole Foods Market®
Thirty three schools will have new healthy salad bars in lunchrooms in time for back-to-school
NEW HAVEN, Conn. (May 20, 2011) – The New Haven Public Schools (NHPS) were selected to receive 33 healthy salad bar kits through Whole Foods Market’s Salad Bar Project, a campaign created to help empower schools to increase their students’ lunchtime consumption of fruits and vegetables.
Tim Cipriano, Food Service Director for New Haven Public Schools, led the grant application process for the school district and was thrilled when he was notified that 33 schools would receive salad bar grants from Whole Foods Market. “With the addition of these salad bars, the children in our schools will have more access to fresh vegetables and legumes. Salad bars are a great way to open up the world of fresh, locally grown products to our children. Some of the produce served will come from our own school gardens. The concept of students eating student grown food will have a significant impact on the lives of our children.”
Schools receiving salad bars include:
- Augusta Lewis Troup School
- L.W. Beecher Museum School of Arts & Sciences
- Benjamin Jepson
- Betsy Ross Arts School
- Bishop Woods School
- Brennan-Rogers School (2, one for each building)

- Metropolitan Business Academy
- Microsociety School
- Nathan Hale School
- New Horizons School
- Ross Woodward Classical Studies School
- Sound School
- Truman School
- Wexler-Grant School
- Worthington Hooker School (2, one for each building)
Of the nearly 20,800 students enrolled in New Haven Public Schools, 80 percent qualify for free or reduced lunches. Last school year, over 5.12 million meals were served to students.
“Salad bars are an amazing tool to empower children to make healthy food choices,” said Nona Evans, Salad Bar Project Coordinator for Whole Foods Market. “According to a 2010 UCLA study, children who have salad bars in school lunchrooms consume significantly more fruits and vegetables than those who do not. We hope many more schools and districts will apply for a salad bar grant through Let’s Move Salad Bars to Schools whose goal is 6000 salad bars in schools by 2013.”
The salad bar kits include a five-well Cambro® salad bar complete with utensils, pan inserts, chilling pads and training tools. New Haven School Food Chefs are Headed Back to 2nd Grade!
New Haven School Food Chefs are Headed Back to 2nd Grade!
Chef Timothy Cipriano, Executive Director of Food Services and a team of chefs are headed back to 2nd grade with Chefs Move to Schools, part of the First Lady’s Let’s Move Initiative.
What: Chefs Move to Schools Healthy Snack Event
When: Monday May, 16, 2011; 3:00pm
Where: Clarence Rogers School, 199 Wilmot Road, New Haven; Cafeteria
Chef Tim and a team of school food chefs will descend on Clarence Rogers School to visit the 2nd Grade students from the classes of teachers Dawn Vontz and Christina Guerra. Ms. Vontz and Ms. Guerra have been teaching the children about nutrition this year and Chef Tim and his team of chefs will prepare a healthy snack for the students. This event is geared at increasing the excitement of healthy food for the children.
“Systematic change in needed in this country to control childhood obesity and to educate our children on proper nutrition and choosing REAL foods. With the support of the Culinary Institute of America, Share Our Strength, School Nutrition Association and many other local and national organizations this change has begun. Chefs are ROCK stars; children look up to us,” says Cipriano. “When I walk into one of my schools in my chef jacket the eyes of the children light up and I am asked if I cook on TV. The children are more interested to what I have to say, it is very easy to engage children with food. Children want to learn and Chefs Move to Schools is the program to see through with the necessary change. I am very happy to be working so close with the White House to help make these changes.”
Chef Tim, recently named a ‘Champion of Change’ by the White House joined roughly 1,000 other Chefs from across the nation in June of 2010 at the White House to officially kick off Chefs Move to Schools (CMTS). CMTS asks chefs from around the country to adopt schools in their communities to work with teachers, parents and school nutrition professionals to help educate kids about food and nutrition. The goal is to promote chefs as the catalyst for creating a new nation of child food advocates.

Chef Tim to present in NYC regarding proposed USDA standards for school meals
On Tuesday March 8th, the Food Systems Network of NYC has invited Chef Tim to present on a panel of Nationally Reknowned School Meal Experts to discuss the proposed USDA standards for school meals that were introduced on January 13th. The seminar will begin with a tour of La Marqueta, the recently renovated market space in East Harlem, which houses the newly opened kitchen incubator run by Hot Bread Kitchen.
The USDA proposal requires school meal standards, which would add more fruits, vegetables, whole grains, and fat-free and low-fat milk to school meals, and are based on the most recent Institute of Medicine (IOM) recommendations. Schools would also be required to limit the levels of saturated fat, sodium, calories, and trans fats in meals. The panel will discuss the possibilities for improved meal quality for our public school students.
Our speakers will be:
Amie Hamlin, Executive Director, New York City Coalition for Healthy School Food
Laura Stanley, Learning Lab Manager, School Food FOCUS
Timothy Cipriano, Executive Director, Food Services for New Haven Public Schools
Moderated by Jenny Dirksen, Northeast Director, Share our Strength.

This breakfast meeting was the first of its kind for Child Nutrition Professionals in CT and was a great opportunity to come to the Legislative Office Building next to the State Capitol and find out how you can help CT's legislators understand child nutrition programs. Talking points and first timer tips were made available.
The agenda was chock full of speakers from the three organizations talking about advocacy and how to talk to your legislators. The presentations were very upbeat and kept the participants fully engaged for an hour until the Legislative Breakfast was to begin. The room was full of child nutrition professionals and many Dietetic Students from area colleges and Universities. The training session began with:
- Madeleine Diker, Food Service Director for Cheshire Schools and the State Public Policy Coordinator for SNACT reviewed the 2011 CT Legislative Issue Paper.
- Dawn Crayco, Deputy Director of EHC! and Teresa Dotson, Puplic Policy Coordinator for CDA reviewed the talking points for the day.
- Cindy Brooks, Food Service Director of Seymour Public Schools & Public Policy & Legislation Committee Chair for School Nutrition Association gave "First Timer' tips to the attendees.
- Colleen Thompson & Paula Leibovitz of CDA gave an overview of http://www.kidseatright.org/
At 9:20 am the first collaborative Legislative Action Breakfast for School Nutrition in CT officially began with the following speakers from the three organizations discussing the importance of child nutrition:
- Colleen Thompson, President of CDA
- Eileen Faustich, President of SNACT & Food Service Director for Milford Schools
- Lucy Nolan, Executive Director of EHC!
SIDE NOTE: Senator Williams has been a champion of Child Nutrition issues for many years and at just about the same time CDA, EHC! and SNACT organized this breakfast Senator Williams reached out to me to discuss how the CT Legislature can support everything that we, Child Nutrition Professionals, do with our programs that will cost very little to do. The state of CT like every other state is facing huge budget gaps and needs to find creative ways to make changes and also find creative ways to support Child Nutrition in CT. We met several times and instead of reinventing the wheel Senator Williams decided we could piggyback of the Let's Move Program developed by the First Lady...Let's Move Connecticut was born.
Senator Williams alerted everyone in the room that he started the day with a healthy breakfast of stove top oatmeal with walnuts. He then spoke of the challenges associated with operating a Child Nutrition Program (CNP) in CT and how unfunded mandates only make our jobs more difficult. He also mentioned that his wife is a school administrator and she speaks often of the challenges of getting the students through the line, having them sit and eat healthy foods (all for less than a couple bucks per meal) without fighting in the cafe and getting them back to class and somehow CNP's are supposed to also break even
The Senator brought up some very important points to remember as we move into a tough budget time; partnerships and close working relationships to get through tough times. One of the parnerships he spoke a lot about is the partnership CT is entering with the First Lady's Let's Move Program by rolling out Let's Move Connecticut. The basic jist is to have Let's Move Connecticut be the vehicle to keep CT not only at the forefront of child nutrition but to continue to lead the way. Let's Move Connecticut will include bringing in Registered Dietitians into Schools, working with Chefs Move to Schools and getting CT schools signed up with the Healthier US School Challenge (HUSSC). Estimates out there suggest that as many as 2/3 of CT's schools will qualify already for the HUSSC.
The Farm to School Program is popular in CT and local food in CT adds $3 billion to the economy so this is a program that more school districts can become actively involved in!
CT is last in the country for student participation in the breakfast program and Let's Move Connecticut and its partners will support efforts to increase these numbers. (FRAC School Breakfast Report Card 2009-2010)
Let's Move Connecticut will be the collaborative that is organized to begin training programs for school nutrition workers when the USDA allocates those funds. Let's Move Connecticut will be ready to work with school nutrition programs to adapt to the new dietary guidelines. Let's Move Connecticut will be the driving force supporting school nutrition programs in CT.
The Senator wrapped up his comments by alerting the attendees to think outside the box, he then thanked everyone for their commitment to feeding our children.
Senator Williams then took questions from the audience:
- Beth Gankofskie, Food Service Director of Mansfield Schools: "Should we, as attendees who are going to visit our legislators promote the current CT Nutrition Standards and ask them to keep the current funding stream intact?" The Senator highly encouraged the attendees to speak about the importance of feeding kids healthier foods and how if that funding was eliminated how programs would be forced to serving less than desirable food again.
- Alan Belchak, Food Service Director of West Haven Schools: "In the 1980's CT was given a block grant to supplement school meal funding. That grant was for $2.35 million dollars and at the time offerred an $.08 per lunch reimbursement. Since that time our meal participation has increased dramatically and the reimbursement is currently about $.04 per lunch served. Will we see an increase in the amount of that grant anytime soon?" The Senator explained how CT received that funding and reiterated that with the current fiscal crisis that block grant will remain the same and how CT like many other states are fighting to stay in check.
Let's Move Connecticut will also be the collaborative that is organized to begin training programs for school nutrition workers when the USDA allocates those funds. Let's Move Connecticut will be ready to work with school nutrition programs to adapt to the new dietary guidelines. Let's Move Connecticut will be the driving force supporting school nutrition programs in CT.
Most importantly from a Childhood Hunger standpoint, this program ties into and supports President Obama's pledge to end childhood hunger by 2015 and aligns perfectly with Connecticut's No Kid Hungry Campaign to End Childhood Hunger. Go to http://www.nokidhungry.org/ to take the PLEDGE!

Chef Tim will give the opening keynote at SNA of Massachusetts ABCs of USDA Foods Conference this Thursday!
This Thursday I have been invited to give the opening keynote presentation at the SNA Massachusetts ABC's of USDA Foods Conference in Boxborough, MA. Immediately following SNA of Massachusetts President’s Welcome, I will present the keynote, titled "Thinking Outside the Lunch Box".
The text from the website offers up this glimpse of the presentation:
Discover new ways to shape and design your school meals programs. Tim Cipriano, Chef and Executive Director of Food Services in New Haven, CT, is passionate about school nutrition and childhood hunger.
Let’s Move! Chef, Tim Cipriano will start the day with exciting stories from the front lines, hear how your peers divert their commodities, and learn how to increase your participation rates.
He will share his stories on how his passions have helped shape New Haven’s meal programs into one of the most progressive programs in the country all while increasing reimbursable meal counts, increasing revenue and keeping expenses down. All that and no chicken nuggets!
As part of the Chefs Move to Schools initiative he is on the cutting edge of child nutrition, working with the First Lady’s office, Congress, and the USDA. Tim is a dynamic speaker with lots to share.
The conference continues with presentations on:
-The ABCs of Diverting Your USDA Foods Commodities
-Massachusetts School Nutrition Bill Update
-Learn How to Increase Your Participation
